A super creamy, herby, tomato sauce with gluten free penne pasta, with some delicious, fresh Italian sausage mixed in! This recipe is whole 30 and paleo friendly meaning it is both dairy free and gluten free! I love recipes like this for a busy weeknight because it is so simple and easy to make! The entire dish is done in under 15 minutes!
Pasta is the ultimate weeknight meal ingredient. It is simple, uses minimal dishes, and never disappoints. I was hesitant to try gluten free pasta for a while because I didn't know if I would like it. We went the first year in our home with barely any pasta meals made because we usually try to eat completely gluten free during the week nights. I finally decided to do it and bought a box of gluten free penne. Now I don't know why it took me so long to make the switch! There was literally no difference between the gluten free pasta and regular pasta, it tasted the same and the texture was identical.
I love creamier sauces so I started playing around with this flavor combo and finally came up with the perfect mix of ingredients. The sauce is so fresh and that is one of the biggest reasons I like to make my own sauce instead of buying pre made sauces. The flavor is just so much more inviting!
I also love a good, fresh Italian sausage. It was the perfect flavor to add to this dish and married all of the flavors together so perfectly.
Ingredients:
- gluten free penne pasta
- coconut milk
- crushed tomatoes
- garlic cloves
- salt and pepper
- Italian seasoning
- garlic powder
- onion powder
- olive oil
- Italian Sausage

The Steps
To start, bring water to a boil. Once boiling add the pasta. Cook until done and then strain out the water. Cook the Italian Sauce in a frying pan with olive oil until done.
Mince the garlic and then add the garlic to the skillet with olive oil. Cook until fragrant. Add in the tomato and coconut milk. Simmer on medium low for 5 minutes, stirring occasionally. Add in the Italian Seasoning, garlic powder, onion powder, salt and pepper. Mix well.
Add in the pasta and mix in. Cut up the Italian sausage and fold into the pasta. Serve with a parsley garnish.
Do I have to use gluten free pasta?
Nope! You could use the same sauce recipe and use regular pasta instead! It won't make a difference!
Can the Italian Sausage be subbed out?
Yes! You can really use any protein you'd prefer! I think cubed chicken would be an awesome ingredient to sub out, but chicken will definitely take a little longer to cook! I do think that Italian Sausage pairs the best. You also can just omit meat completely if you want or switch for a vegan option like tofu!

Creamy Tomato Pasta
Equipment
- Sauce Pan
- Skillet
Ingredients
- 1 lb gluten free penne pasta
- 1 15 oz can crushed tomato
- ½ cup coconut milk
- 2 garlic cloves minced
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 4 Italian Sausages chopped
Instructions
- Boil pasta by following the directions on the box. Strain pasta and set aside.
- Cut up the Italian Sausage and cook in olive oil until done.
- Mince the garlic. Add the garlic into skillet with olive oil and cook until fragrant.
- Add in the crushed tomato and coconut milk. Simmer on medium low for 5 minutes.
- Add in the Italian seasoning, garlic powder, onion powder, salt and pepper. Mix well.
- Add in pasta and fold into the sauce.
- Fold the sausage into the pasta.
- Serve and garnish with fresh parsley.
