Crispy on the outside, yet soft on the inside, these Gluten Free Peanut Butter Cookies are absolutely mouthwatering. The rich peanut butter flavor truly shines through this recipe. This recipe is not only gluten free, but also dairy free and has no added sugars what so ever! A healthy peanut butter cookie? I think YES!
If you haven't noticed yet, peanut butter is my jam. It is easily my favorite flavor to exist and I crave it a little too often. I have such a hard time branching out, its ridiculous! Even when we get ice cream, I ALWAYS order something with peanut butter in it! I mean there are so many amazing flavors, but that seems to be the one I am always leaning towards.
I definitely get my love of peanut butter from my Dad. He is obsessed as well. My Mom on the other hand can't stand peanut butter, so it was quite obvious who stole my Reese's when they mysteriously went missing from my Halloween bag every year when I went to bed...

The Steps:
To start, mix together the peanut butter, maple syrup, egg, coconut oil and vanilla. Mix until well combined and a creamy texture is created. Add in the almond flour, coconut flour and baking powder. Mix well using a rubber spatula.
Take about 2 tablespoon of dough and roll into a ball. Place the ball of dough on a baking sheet lined with parchment paper. Using a fork, press down lightly across the cookie and then do the same thing on the opposite side to create a criss cross pattern. Bake the cookies. Once the cookies are done, let them cool on a cooling rack and then enjoy!
Why do you use both almond flour and coconut flour?
Almond flour is a very dry flour and does not contain much moisture. Coconut flour on the other hand has a lot of moisture. Mixed together, the two flours better mimic an all purpose flour and won't dry out your baked goods!
What is the difference between refined coconut oil and unrefined coconut oil?
Refined coconut oil has no coconut flavoring when unrefined does. If you notice that a recipe seems to have a coconut flavor and it isn't supposed to, the first place to check is whether or not you got refined or unrefined coconut oil.

Gluten Free Peanut Butter Cookies
Equipment
- Baking Sheet
- Rubber Spatula
- Mixing Bowl
Ingredients
- 1 cup natural peanut butter
- ¼ cup maple syrup
- ⅓ cup refined coconut oil
- 1 egg
- 1 teaspoon vanilla
- 1 ½ cup almond flour
- 3 tablespoon coconut flour
- 1 teaspoon baking powder
Instructions
- Preheat oven to 350 degrees and line baking sheet with parchment paper.
- In a bowl, combine peanut butter, maple syrup, egg, coconut oil, and vanilla. Mix until a creamy texture is formed.
- Add in almond flour, coconut flour and baking powder.
- Mix until well combined.
- Remove about 2 tablespoon of dough from the bowl and roll in a ball. Place the ball on the parchment paper. Repeat until all of the dough is on the parchment paper.
- Using a fork, lightly press down across the ball. Do this the opposite way as well, forming a criss cross pattern.
- Bake for 14-16 minutes.
- When done, remove the cookies and place them on a cooling rack for at least 10 minutes before enjoying.
