Healthy Buckeyes

Rich, chocolatey flavor surrounding the creamy, salty peanut butter inside layer.  These little balls of amazingness are gluten free, dairy free and have no added sugars!

For the Peanut Butter Mixture

For the Chocolate Mixture

Instructions
 

  • In a mixing bowl, mix together peanut butter, coconut oil, maple syrup and vanilla. Mix until completely combined.
  • Place the bowl in the fridge for 30 minutes to let the mixture set.
  • Take about 1 ½ tablespoon of the mixture out at a time and roll into a ball. Once all of the mixture is rolled into balls, place them on a baking sheet and place the baking sheet back in the fridge so they can set a little longer.
  • In a sauce pan on low heat, melt chocolate with honey and coconut oil on low heat.
  • Once the chocolate is melted, stick a toothpick into one of the peanut butter balls and roll it in the chocolate, coating about ½ to ¾ of the ball. Place the balls back on the baking sheet.
  • Once all of the buckeyes are made, place the baking sheet back in the fridge for about 30 minutes so the chocolate can set.
  • Once the chocolate is set you can enjoy!

Notes

Save in a tupperware in the fridge for up to two weeks.  Make sure you keep them in the fridge or the coconut oil in it will start to melt and they will become too soft and sticky.
