Gluten Free Peanut Butter Cookies

Crispy on the outside, yet soft on the inside, these Gluten Free Peanut Butter Cookies are absolutely mouthwatering.  The rich peanut butter flavor truly shines through this recipe.  This recipe is not only gluten free, but also dairy free and has no added sugars what so ever!  A healthy peanut butter cookie?  I think YES!

  • Preheat oven to 350 degrees and line baking sheet with parchment paper.
  • In a bowl, combine peanut butter, maple syrup, egg, coconut oil, and vanilla. Mix until a creamy texture is formed.
  • Add in almond flour, coconut flour and baking powder.
  • Mix until well combined.
  • Remove about 2 tablespoon of dough from the bowl and roll in a ball. Place the ball on the parchment paper. Repeat until all of the dough is on the parchment paper.
  • Using a fork, lightly press down across the ball. Do this the opposite way as well, forming a criss cross pattern.
  • Bake for 14-16 minutes.
  • When done, remove the cookies and place them on a cooling rack for at least 10 minutes before enjoying.
