Homemade Copycat Sausage McGriddles

Fluffy, soft pancakes infused with sweet syrup with a savory sausage patty sandwiched in between.

Equipment

  • Wide mouth mason jar lids
  • Mixing Bowl
  • griddle or griddle pan

Ingredients
  

  • 1 ½ cup flour
  • ½ teaspoon salt
  • 2 teaspoon baking powder
  • 2 tablespoon sugar
  • 2 eggs
  • 1 ½ cup milk
  • 8 sausage patties
  • syrup to drizzle into pancakes

Instructions
 

  • In a mixing bowl, combine flour, sugar, salt and baking powder.  Add in milk and eggs.  Whisk until combined. 
  • Turn on the griddle.  Place the sausage patties on the griddle.  Flatten them with the back of the spatula lightly so that they are about the size of a mason jar lid.  Cook until sausage is done.
  • Place a mason jar lid on the griddle with the larger opening touching the griddle.  Spray inside the mason jar lid with pam.  Spoon pancake batter into the lid until it is half full.  Pour about a teaspoon of syrup on top of the pancake while the batter is still wet. Once the edges start to look cooked, remove the mason jar lid.  Do this carefully, it will be hot but it should come right off.  Flip the pancake and cook until it is cooked all the way through.  Repeat until all of the pancake batter is used. 
  • Assemble your sandwiches using two pancakes with a sausage sandwiched between.  Enjoy immediately or save for later.

Notes

Save extra preassembled sandwiches on a plate covered or in an air tight container.  Reheat before eating later.
