Chewy on the inside, crispy on the outside stuffed with broken up Oreos and melty white chocolate chips. Think cookies and cream ice cream but in cookie form.
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a mixing bowl, beat together softened better and sugar until creamy. Add in eggs one at a time while mixing. Add in vanilla and mix.
In a separate bowl, mix together flour, baking powder, baking soda and kosher salt. Slowly add in the dry ingredients to the wet while mixing on low.
Fold in white chocolate chips. Add Oreos to a Ziploc bag or food processor and smash or process until they are a crumb texture. Fold in Oreo crumbs.
Spoon about 2 tablespoon of dough onto the cookie sheet at a time. Bake 14-16 minutes. Remove to a cooling rack and add extra Oreo pieces on top if desired. Serve warm for save for later.
