Peel the potatoes with the potato peeler. Cut the potatoes into thin, but long pieces. Place all of the potato pieces into a large bowl and cover in water. Let the fries soak for about an hour. Remove fries from the water and dry completely.
Fill deep fryer with oil and heat to 325 degrees. Place the fries in the fryer and fry for about 5 minutes. Remove from the fryer. After all of the fries have fried, turn the heat up to 375 degrees. Add the fries to the oil one more time and fry for 5-7 minutes until the ends begin to brown.
Remove to a bowl and sprinkle salt, pepper and garlic. Serve immediately.
