Ingredients
  

For the Egg Mixture

  • 6 eggs
  • ¾ cup heavy cream
  • salt and pepper

Ingredients to Add in

  • 8 slices bacon
  • ½ onion
  • ½ tomato
  • ¼ cup spinach

Pie Crust

  • 2 pie crusts pre made

Instructions
 

  • Preheat the oven to 375 degrees and grease a mini muffin pan. Slice and cook the bacon on medium heat. Once the bacon is done, place it on top of paper towels to drain the excess grease.In a bowl, whisk together eggs, heavy whipping cream and salt and pepper.
  • Use a small biscuit cutter to cut the pie crust into circles. Place the pie crust circles into the muffin pan and press them down to form to the pan.
  • Once the bacon has come to room temperature, add bacon pieces to each pie crust cup. Add sliced onions, tomatoes, or spinach to each cup or leave them just plain bacon. Add in 1 tablespoon of cheddar cheese and 1 teaspoon parmesan cheese.
  • Pour egg mixture into each cup until it reaches the rim of the pie crust. Bake the quiche for 20-22 minutes. Remove from the muffin pan and serve warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • These ingredients do stand up well to freezing. Cooked quiches can be frozen in a freezer safe container for up to 2 months.
