Tzatziki Sauce Greek Stuffed Peppers with Rice and Feta

Turkey and Feta Stuffed Peppers with Tzatziki sauce.  The Mediterranean inspired weeknight meal of your dreams.  The peppers are stuffed with ground turkey, lemon rice, fresh dill, feta cheese and is topped with a creamy, herby Tzatziki sauce.

For the peppers

For the Tzatziki Sauce

  • 1 cup non fat greek yogurt
  • ¾ cucumber diced
  • 2 tablespoon dill chopped
  • 2 tablespoon lemon juice
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 350 degrees.
  • Add olive oil and garlic to the frying pan.  Cook until fragrant.
  • Add the ground turkey and cook until browned.
  • Cook the rice using chicken broth instead of water using either the directions on the package or a rice cooker.  Once the rice is done, add the lemon juice and mix. 
  • Remove the ground turkey from the stove and add to the mixing bowl. 
  • Add in rice, feta cheese and fresh dill.  Mix until combined.
  • Cut the bell peppers in half and take out the seeds.  Stuff the peppers with the ground turkey mix and sprinkle feta cheese one top.
  • Bake at 350 degrees for 15 minutes.
  • While the peppers are baking, prep the tzatziki sauce. 
  • Chop up the dill and dice the cucumber.  Mix greek yogurt, dill, cucumber, lemon juice and salt and pepper to the bowl.  Mix until well combined.
  • Once the peppers are done, remove them from the oven and top with Tzatziki sauce.
