French Onion Provolone Grilled Cheese

French Onion Provolone Grilled Cheese.  This is basically a french onion soup in sandwich form, and yes, it is as good as it sounds.  Sweet caramelized onions cooked in beef broth at the end, melty provolone cheese and toasted artisan bread all thrown together to create the most cheesy, mouthwatering sandwich you will ever have.

Ingredients
  

  • 4 slices white artisan bread
  • 2 tablespoon butter
  • 2 onions sliced
  • 2 teaspoon sugar
  • 2 tablespoon beef broth
  • 8 slices provolone cheese
  • 4 tablespoon mayonnaise
  • fresh thyme to garnish

Instructions
 

  • In a skillet, add butter and sliced onions.  Cook on medium low for about 20 minutes until onions start to brown.
  • Add in sugar and mix in.  Cook another 20 minutes until onions begin to look caramelized.
  • Add in beef broth and cook another 5-10 minutes.  The beef broth will cook into the onions.
  • Spread mayonnaise on the outside of the slices of bread.  This is the side of the bread that will be on the direct heat.
  • Place 2 slices of cheese on the inside of each slice. 
  • On one half, add half of the onions to each sandwich.
  • Place the other slice on top of the onions to create the sandwich.
  • Place sandwich in the cast iron skillet once it is heated up.  Cook on each side for 3-5 minutes or until the bread becomes toasted and the cheese begins to melt. 
  • Garnish with thyme.
