Roasted tomatoes, spinach and feta and mozzarella cheeses sitting on top of a layer of sweet roasted garlic rolled up in pizza dough, sliced into perfect pinwheels and then baked away to cheesy, crispy perfection in the oven.
Preheat oven to 400 degrees. In a casserole dish add cherry tomatoes and a bunch of garlic with the top cut off. Drizzle olive oil over the tomatoes and the top of the garlic bunch. Bake for 30 minutes.
On a clean counter, spread flour evenly. Roll out pizza dough in a rectangular shape.
Once the tomatoes and garlic are roasted, remove the casserole dish from the oven and increase the oven temp to 425 degrees. Once cooled, squeeze the garlic from the bunch into a bowl and mash. Spread the mashed garlic evenly on the pizza dough. Mash the tomatoes so they break in the casserole dish. Evenly spread the tomatoes over the pizza dough.
Evenly sprinkle feta cheese and mozzarella cheese over the tomatoes. Spread the spinach on top. Roll the pizza dough away from you. Cut into 8 even pieces.
Place the pinwheels in the cast iron skillet leaving a little space in between each pinwheel. Bake for 20-22 minutes. Remove from the oven and sprinkle oregano on top. Allow to cool about 3 minutes before serving.
