Air Fried Crispy Chicken Mozzarella Tomato Pesto Sandwiches

Crispy, air fried, tenderized chicken breasts topped with melted, fresh mozzarella cheese, stacked with tomato and sandwiched between one of Martin’s Big Marty’s Rolls smothered in pesto.

Ingredients
  

  • 4 chicken breasts
  • 2 cups Italian Style Bread Crumbs
  • 3 eggs
  • 8 slices fresh mozzarella
  • 1 tomato
  • ½ cup pesto
  • 8 Martin's Big Marty's Rolls

Instructions
 

  • Slice the chicken breasts in half to make them thinner.  Cut each slice in half.  The chicken breasts should be in thinner square shapes once this is done.  Place all of the chicken breasts on a cookie sheet and cover with plastic wrap.  Using a meat tenderizer, tenderize the chicken.
  • Whisk the eggs and place the bread crumbs on a plate.  Place each piece of chicken into the egg and then coat with the breadcrumbs.  You can repeat this process if not enough bread crumbs stick to the chicken. Place each piece of breaded chicken into the air fryer. 
  • Air fry at 390 degrees for 14 minutes, flipping halfway through.
  • While the chicken is cooking, slice the mozzarella and the tomatoes.
  • Once the chicken is done, top the chicken with the mozzarella slices.  Place the chicken back in the air fryer for 5 minutes at 370 degrees or until the cheese is melted.
  •  Spread pesto on one side of the Martin’s Big Marty’s Rolls.  Place a piece of chicken on the bottom bun and add a slice of tomato on top.  Place the top bun on top of the tomato and enjoy!
