Four Mini Bacon Quiche Recipes

Cheesy, mini quiches with crispy bacon bits shaped to mini muffin cups creating the perfect appetizer or grab and go breakfast.

Ingredients:  Base Ingredients: large eggs heavy whipping cream sharp cheddar cheese parmesan cheese bacon salt and black pepper pie crust Additional ingredients: tomato spinach onion

The Steps

Step 1: Preheat the oven to 375 degrees and grease a mini muffin pan. Slice and cook the bacon on medium heat. Once the bacon is done, place it on top of paper towels to drain the excess grease.In a bowl, whisk together eggs, heavy whipping cream and salt and pepper.

Step 3: Once the bacon has come to room temperature, add bacon pieces to each pie crust cup. Add sliced onions, tomatoes, or spinach to each cup or leave them just plain bacon. Add in 1 tablespoon of cheddar cheese and 1 teaspoon parmesan cheese.

Step 4: Pour egg mixture into each cup until it reaches the rim of the pie crust. Bake the quiche for 20-22 minutes. Remove from the muffin pan and serve warm.

Hint: don't be afraid to overfill your pie cups a little bit, a little extra quiche is definitely not a bad thing in this case. The quiches will slightly sink once they are removed from the oven so even if they look really big when you take them out, just give them a second and the quiche to pie crust ratio will even out.
