Instructions
What is fun about these mini bacon cheese quiches is you have the base recipe for the quiche and then a few different ingredients you can add to change the recipe up and make it your own.
Preheat the oven to 375 degrees and grease a mini muffin pan. Slice and cook the bacon on medium heat. Once the bacon is done, place it on top of paper towels to drain the excess grease. In a bowl, whisk together eggs, heavy whipping cream and salt and pepper.
Use a small biscuit cutter to cut the pie crust into circles. Place the pie crust circles into the muffin pan and press them down to form to the pan.
Once the bacon has come to room temperature, add bacon pieces to each pie crust cup. Add sliced onions, tomatoes, or spinach to each cup or leave them just plain bacon. Add in 1 tablespoon of cheddar cheese and 1 teaspoon parmesan cheese.
Pour egg mixture into each cup until it reaches the rim of the pie crust. Bake the quiche for 20-22 minutes. Remove from the muffin pan and serve warm.
Hint: don't be afraid to overfill your pie cups a little bit, a little extra quiche is definitely not a bad thing in this case. The quiches will slightly sink once they are removed from the oven so even if they look really big when you take them out, just give them a second and the quiche to pie crust ratio will even out.
Substitutions
- Heavy Cream - heavy cream can be replaced with half and half for a slightly less fatty alternative.
- Bacon - bacon can be swapped out with turkey bacon for a healthier alternative.
- Vegetarian - omit the bacon and just add the veggies for a vegetarian option.
- Cheese - swiss cheese is another great option to add to the recipe.
Variations
Even though a few variations are already provided within the recipe, there is actually more you can add to change these up even more!
- Spicy - add chili pepper flakes into the egg mixture to add some heat to the dish.
- Mushroom - add some diced mushrooms to the mix for another flavor profile.
- Green Onion - add some chopped green onions to the mix to add a lot of extra flavor. This can even be added to the bacon quiche variations already provided in this recipe for extra flavor.
- Pastry Dough- replace the pie dough with puff pastry circles for a little extra crisp. You could also use phyllo dough cups.
- Sweet Potato Crust- use a shredded sweet potato crust for a completely different flavor profile.

FAQ
For the most part, yes. With these being so small though, bacon does work the best. If you are making a full size quiche, steak or crab would be an absolutely delicious addition. When it comes to vegetables, I would choose vegetables that cook quickly so they are not super crunchy in your quiche.
Both! These mini bacon quiches can be served as a higher end hors d'oeuvres at a wedding or at a party. It is also a great appetizer around the holidays. This mini quiche recipe can also be great as a grab and go breakfast or served at a girls day brunch. They are extremely versatile.
