Two syrup infused fluffy pancakes cooked on a flat top griddle with sausage patties sandwiched in between. The homemade mcgriddles are the perfect sweet and savory breakfast sandwich.
This homemade mcgriddle recipe is an easy breakfast and perfect to have on hand as a pre-made breakfast that is ready for a quick grab and go morning. It is also a great to serve as a brunch item on Mother's Day or Christmas. It can also be a great option to snack on while watching the Thanksgiving Day parade. This breakfast sandwich is a kid friendly recipe and will quickly become a before school favorite for the kids.

Ingredients
- flour
- salt
- baking powder
- sugar
- eggs
- milk
- pork sausage patties

Instructions
In a mixing bowl, combine flour, sugar, salt and baking powder. Add in milk and eggs. Whisk until combined.
Turn on the griddle to medium heat. Place the sausage patties on the griddle. Flatten them with the back of the spatula lightly so that they are about the size of a mason jar lid. Cook until sausage is done.
Place a mason jar lid on the griddle with the larger opening touching the griddle. Spray inside the mason jar lid with cooking spray. Spoon pancake batter into the lid until it is half full. Pour about a teaspoon of syrup on top of the pancake while the batter is still wet. Once the edges start to look cooked, remove the mason jar lid. Do this carefully, it will be hot but it should come right off. Flip the pancake and cook until it is cooked all the way through. Repeat until all of the pancake batter is used.
Assemble your sandwiches using two pancakes with a sausage patty sandwiched between. Enjoy immediately or save for later.
Hint: use ground sausage and form the patties yourself to control how big each patty is to assure they fit the pancake patties well.
Substitutions
- Sausage - use turkey sausage instead of pork sausage as a poultry option if preferred over red meat
- Pancake - use gluten pancake mix instead of the included pancake recipe to make this gluten free
- Vegetarian - swap the sausage out for meatless sausage for a vegetarian option
Variations
- Spicy - use spicy sausage or chorizo sausage for a sweet and spicy variation
- Deluxe - add egg and a slice of american cheese or cheddar cheese for a deluxe sausage egg and cheese variation
- Sausage Biscuit Sandwich - use biscuits instead of the pancake buns to make a copycat sausage biscuit sandwich which you can find on the same menu as the mcgriddles
- Kid Friendly - use shaped cookie cutters to shape the sausage mcgriddles in a fun way to make it more kid friendly
Equipment
To Make this recipe, a flat top griddle such as a Blackstone is needed. If this is not available, an electric griddle can be used inside or a cast iron griddle attachment can be used on a gas grill.
To mix the pancake batter a medium bowl and whisk is needed. Mason jar lids or nonstick egg rings are needed to get the shape of the pancakes. Use a spatula to flip the pancakes and sausage.
Storage
Store the assembled sandwiches wrapped in tin foil or in an airtight container in the fridge for up to 3-5 days.
These ingredients do stand up well to freezing for up to 2 months.
Top tip
For extra maple flavor in the pancake, whisk in ¼ cup of maple syrup into the pancake batter. This will add some extra flavor to the mini pancake buns. The mcgriddles can also be served with a side of syrup if more is desired.
