The Steps:
Preheat the oven to 375 degrees and line a muffin tin with muffin liners. In the KitchenAid, add eggs and sugar. Beat together until creamy. Add in vegetable oil and vanilla. Mix until combined. In a separate mixing bowl, combine flour and baking powder. Slowly add this dry ingredients to the mixing bowl while the mixer mixes on low. Remove the mixing bowl from the mixer and fold in the blueberries. Bake the muffins for 28-30 minutes. Serve warm with butter.Can I bake the muffins in a regular size muffin pan instead of a jumbo one?

Homemade Jumbo Blueberry Muffins

I made the blueberry muffins today. Yummy, yummy!! I didn't want to use vegetable oil, so I used 1/2 coconut oil and 1/2 avocado oil. They were so good. And, I made them regular size and baked for 20 minutes. I love that they weren't so sweet. Perfect with some kerry gold butter on them.
