Blueberry Scones with a Lemon Glaze. Fluffy, sweet scones stuffed with fresh blueberries with a lemon glaze drizzled on top. These scones are exactly what I think of when I think of a Spring brunch. Well, that and mimosas. The sweet blueberry flavor mixed with the lemon glaze is the most perfect combination. Believe me when I say a batch of these definitely don't last long in my household!
Scones are my favorite brunch item of all time. They are so fluffy, sweet and pair perfectly with a nice hot cup of tea. I have been visiting tea houses since I was a little girl, and i have to say, the part I look forward to the most every single time is the scones. They just pair perfectly with the assortment of jams and whipped cream.
Now blueberry scones are definitely my favorite. There is just something amazing about a fresh blueberry that is baked to juicy perfection in something like a scone. It brings so much flavor out of the blueberry and really allows it to shine. With the lemon glaze added in, it creates the perfect marriage with acidic and sweet flavors.
Ingredients:
- butter
- eggs
- sugar
- vanilla
- flour
- baking powder
- baking soda
- salt
- fresh blueberries
- powdered sugar
- lemon extract
- water

The Steps:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Add softened butter, egg, sugar and vanilla into the mixing bowl. Mix together until a creamy texture is formed. Add in flour, baking powder, baking soda, and salt. Mix on low until well combined speeding up the mixer gradually. Add in blueberries and fold into the dough. Remove the dough from the mixing bowl and place on the baking sheet. Form the dough into a disk shape with a flat top.
Cut the dough batter into 8 even pieces. Space the 8 pieces out on the baking sheet. Bake for 20-22 minutes. While the scones are baking, combine powdered sugar, water and lemon extract in a bowl. Mix well. When the scones are done baking, place them on a cooling rack until completely cooled. Drizzle the lemon glaze on top of the scones and allow it to harden. Serve once the glaze is hardened.
Do I have to add the lemon glaze?
Nope! Totally optional but highly suggested! Without it they are just blueberry scones, but I can promise you, the lemon compliments the blueberry so beautifully and it is absolutely delicious!
Can I add whipped cream and jam?
Yes! Always! Extra flavor is never a bad thing! I think that whipped cream and jam always goes perfectly with a good scone!

I have some blueberries I froze and was wondering if I could use them in this recipe.

You definitely can! I do find that frozen blueberries do lose some of the flavor from being frozen, but still delicious overall!
