French Onion Provolone Grilled Cheese. This is basically a french onion soup in sandwich form, and yes, it is as good as it sounds. Sweet caramelized onions cooked in beef broth at the end, melty provolone cheese and toasted artisan bread all thrown together to create the most cheesy, mouthwatering sandwich you will ever have. Sandwiches like this are seriously the best. I love a delicious gourmet sandwich on good quality bread. It will always be a favorite of mine.
I will never forget the first time I had french onion soup. I was super skeptical, but it always just looked so good to me. To be honest, I didn't know what to expect. Now that I have had it, I know exactly what I was missing out on for all of those years and 100% regret not trying it sooner. So now, my french onion soup obsession is expanding into sandwiches apparently. A french onion provolone grilled cheese sandwich to be exact!
This sandwich idea came to me about an hour before I made it. This is when my absolute favorite recipe ideas come to me. I was at the food store and saw a half of a loaf of artisan bread on sale. I knew right then what I was going to do. I got home and whipped these babies up for Nate and I, and oh my goodness, best. idea. ever.
Ingredients for French Onion Provolone Grilled Cheese:
- white artisan bread
- butter
- onions
- beef broth
- sugar
- provolone cheese
- mayonnaise
- fresh thyme

The Steps to make French Onion Provolone Grilled Cheese:
- In a skillet, add butter and sliced onions. Cook on medium low for about 20 minutes until onions start to brown. Add in sugar and mix in. Cook another 20 minutes until onions begin to look caramelized.
- Add in beef broth and cook another 5-10 minutes. The beef broth will cook into the onions.
- Spread mayonnaise on the outside of the slices of bread. This is the side of the bread that will be on the direct heat.
- Place 2 slices of provolone cheese on the inside of each slice. On one half, add half of the onions to each sandwich. Place the other slice of provolone cheese on top of the onions to create the sandwich.
- Place sandwich in the cast iron skillet once it is heated up. Cook on each side for 3-5 minutes or until the bread becomes toasted and the cheese begins to melt. Garnish with thyme. And there you have it! A French Onion Provolone Grilled Cheese!
Why do you spread mayonnaise on the bread?
Mayonnaise is a fat, just like butter and it creates the same effect. I like to use mayonnaise because it is easier to evenly spread and adds a ton of flavor. Don't be afraid to use mayonnaise in the place of butter sometimes. You get a similar effect and is much easier to use in some situations. I also do this when toasting buns on the grill. It works perfectly.
Do the onions get soggy in the beef broth?
Nope! They hold their caramelized texture. There is not a lot of beef broth being added, so it really just adds that desired beef flavor you get with the soup version of this recipe.
