Herby Tuna and Spinach Melt. Herby, creamy tuna mixed with crispy vegetables, spinach, crispy sprouts, and melty cheese all sandwiched between two toasted slices of sourdough bread. Talk about cheesy perfection. This recipe is the perfect lunch or dinner recipe and always hits the spot. A diner classic is brought to the absolute next level here.
Tuna fish sandwiches are my favorite lunch growing up. I did a little happy dance whenever I opened up my lunch box and realized my Mom packed it for me. I can easily say this is still my favorite lunch by far. And then you add in some melty cheese and we are in business.
The best part about this recipe is that it is packed with nutritious value on top of being a guilty pleasure. I mean thats a win win in my book! This sandwich is also cooked in my all time favorite pan, my cast iron. It gives it the most perfect crisp imaginable.
Ingredients:
- sourdough bread
- tuna
- celery stalks
- onion
- mayonnaise
- dill
- spinach
- alfalfa sprouts
- provolone cheese

The Steps
Dice up the celery and onion and chop the dill. In a bowl, mix tuna, celery, onion, dill and mayonnaise. Spread a thin layer of mayonnaise on one side of each slice of sourdough bread. Heat up the cast iron skillet. Place two slices of sourdough mayonnaise side down on the cast iron. The mayonnaise will help evenly toast the bread.
Place spinach on both halves of sourdough completely covering the bread. Spread the alfalfa sprouts over the spinach. Spoon the tuna mixture evenly on top of the sprouts. Place the cheese on top of the tuna mixture. Top the cheese with the other half of sourdough. Cook for about 3-5 minutes and then flip both sandwiches. Cook another 3-5 minutes. Cut the sandwiches in half and serve immediately.
What are the benefits of alfalfa sprouts?
Alfalfa sprouts are packed with tons of nutrients such as iron and magnesium. It is also a good source of protein. I also love the little added crunch you get when you bite into a bunch of these baby sprouts!
How does mayonnaise help toast the sourdough?
Mayonnaise is a fat just like butter and helps the bread to evenly toast when pan fried. I prefer to use mayonnaise because it spreads out a lot more even than butter does unless you are working with extremely softened or whipped butter.

- ½ yellow or white onion diced
- 2 2.6 ounce packets tuna or one can
- ½ cup mayonnaise
- 2 tablespoon dill chopped
- 1 cup spinach
- ½ cup alfalfa sprouts
- 6 slices provolone cheese
Instructions
