Grilled Copycat McRib Sandwich. Charred, barbecue seasoned ribs baked and grilled to tender perfection on a fluffy, fresh roll with creamy mayonnaise and dill pickle chips. Hello perfection. As we all know, the McRib has made its reappearance and I am here to tell you that it is a million times better homemade. I mean I love McDonalds, but I also love freshly charred grilled ribs!
I have always been a big fan of ribs. I was such a picky eater as a kid and low key thought I didn't like meats. Well, I can easily admit ribs are the first thing I fell in love with. Especially when they are slathered in barbecue sauce, slow cooked to perfection and then hit with the grill for some extra char.
I remember having my first rib sandwich too. It was in my high school cafeteria, so as you can expect, it was pretty high quality (just kidding). I can easily say this sandwich is the best rib sandwich I have ever had, hands down.
Ingredients:
- 1 rack of beef spare ribs
- vinegar
- mayonnaise
- fresh hoagie roll
- salt
- pepper
- garlic powder
- paprika
- ketchup
- barbecue sauce
- brown sugar
- crushed red pepper flakes
- Frank's Red Hot Sauce
- Worcestershire Sauce

Prep and Cook the Ribs
Preheat the oven to 350 degrees. Remove the membrane from the back of the ribs. To do this, stick your knife under the end of the membrane to remove some from the ribs. Take a paper towel and pull the membrane off. It should come off somewhat easily. Place the ribs on the rack on top of the baking sheet. Pour the vinegar in the bottom of the baking sheet. Cover with tin foil and add the ribs to the oven. Cook for 1 hour and 15 minutes.
Prep the rub and sauce
While the ribs are cooking, add salt, pepper, garlic powder and paprika together and mix. Set aside. In a sauce pan, add ketchup, barbecue sauce, brown sugar, crushed red pepper flakes, Frank's Red Hot Sauce, Worcestershire Sauce, and garlic powder. Mix and simmer for about 10 minutes on medium low.
Let's grill
Turn on your grill to start heating it up. When the ribs are done cooking, remove from the oven. Lift the side of the tin foil away from you so you do not get hit with the steam. Remove the ribs and generously apply the rub to both sides. Place ribs on the grill. Cook about 3 minutes and then flip. Once you flip, begin adding the sauce with a basting brush. Continue this process until all of the sauce is on the ribs. Remove the ribs from the grill.
Build the Sandwich
Pull the bones from the ribs. They should remove easily but you may need to use a knife to cut some away. Slather mayonnaise on the bottom of your hoagie roll. Add the rib meat and then place pickles on top. Serve immediately.
Do you toast the bread?
You can, for this one though I do not. There is already a lot going on with this sandwich and I think the fluffy bread compliments the crispy char on the ribs really well!
Do I have to add mayonnaise?
Nope! I just love mayonnaise on pretty much everything and who doesn't want a little extra fat to add some extra flavor to their sandwich? Unless you don't like mayo, then don't do it.

Ingredients
For the ribs and sandwich
