This tasty breakfast sandwich is the most simple and delicious way to start your morning. Only needing one pan to make it and requiring just 10 minutes out of your day, the simple ingredients that make up this this recipe makes it the ultimate breakfast sandwich. Grab some fresh bagels to easily make these bagel breakfast sandwiches even better.

This delicious bacon egg and cheese breakfast sandwich is the perfect recipe to feed the whole family on a Saturday morning. It is also great to make as an on the go sandwich when you are preparing for vacations or a busy day. It goes perfect when paired with an iced coffee and enjoyed on a sunny morning.
To really take this level to the next level, use homemade bagels or get the bagels fresh from a bakery. The flavor and texture you will get from the fresh bagel is unmatched.

Ingredients
- everything bagel
- eggs
- chives
- salt and pepper

Instructions
- Step 1: Cook the bacon on medium heat until crispy. While the bacon cooks, chop the chives. Slice the tomato. When the bacon is done, place them on a paper towel to drain the grease.
- Step 2: Mix together mayonnaise, ketchup, barbecue sauce, and liquid smoke to make campfire sauce. On medium heat, spray a non stick pan with pam. Whisk two eggs in a bowl. Add salt and pepper to the eggs.
- Step 3: Pour the eggs into the pan and gently and continuously push the edges of the egg towards the middle until a smaller circle of egg forms. Sprinkle chives on top of the eggs. Flip the egg once to cook both sides. Add the slices of cheese and allow the cheese to melt.
- Step 4: Toast the bagel until golden brown. Spread the campfire sauce on both halves of the toasted bagel. Place the eggs and cheese on the bottom half of the bagel. Add a slice of tomato on top of the cheese. Break a slice of bacon in half and add on top of the tomato. Top the sandwich with the top half of the bagel.
Hint: keep the egg moving while cooking so that it does not brown too much or stick to the pan. Continuously pushing the edges of the egg towards the middle until it stops moving and becomes more solid assures you have a nice, fluffy egg.
Substitutions
- Bagel - use plain fresh bagels, sesame bagels, or onion bagels to slightly alter the flavor. You can also choose to use an english muffin
- Gluten Free- use gluten free bagels to make this recipe gluten free
- Dairy Free - use vegan cheese for a dairy free version of this recipe
Variation
- Spicy - add chili flakes while cooking the eggs to imbue heat into the dish, or hot sauce to the campfire sauce
- Deluxe - add guacamole, crispy onions or additional breakfast meats
- Air Fried - make everything in the air fryer for a minimal dish version

Equipment
Bacon is easiest to cook on an electric griddle because it assures for a nice even cook. You will also need a non stick pan to cook the eggs in, a toaster to toast the bagel, a sharp knife and cutting board, and a small bowl to mix the sauce.
Storage
Store pre-assembled breakfast sandwiches wrapped in aluminum foil in the refrigerator for up to two days.
These ingredients do stand up well to freezing already assembled and wrapped in aluminum foil for up to 2 weeks. It is suggested to add the sauce to the bagel after reheating if making ahead of time whether you are freezing it or storing it in the refrigerator. This is the perfect breakfast sandwich to make ahead of time for meal prep and with your favorite bagels to enjoy this homemade version of a favorite on the go breakfast.
Top Tip
After adding the slice of cheese, add about a tablespoon of water to the pan and immediately cover with a lid. This will help the cheese to melt quickly so you have a nice gooey cheese while making sure the egg does not overcook.
FAQ
I will always suggest a crisp bacon made from pork. You can also choose to use Canadian bacon, turkey bacon, or even pork roll or breakfast sausage patty if you want to change up the flavor. Scrapple is a fan favorite in our home as well.
This is definitely personal preference. This sandwich is made with fluffy scrambled eggs. You can choose to use a runny egg as well. Runny yolk in a breakfast sandwich are delicious and decadent.
Cheddar cheese and pepper jack cheese add a to n of flavor and are the preferred cheeses for this recipe. You can also use a slice of American cheese for a more mild flavor for these bacon egg and cheese sandwiches.

Notes
- Add a tablespoon of water to the pan after adding the cheese on top of the eggs and immediately cover with a lid. This will steam the cheese and help it melt faster.
- Constantly move the eggs around when cooking to assure that they do not overcook.
