Baked Buffalo Chicken Taquitos. Buttery buffalo sauce mixed with shredded chicken and cream cheese stuffed in a crispy baked corn tortilla with cheese and dipped in tangy blue cheese dressing. This is the most perfect appetizer, dinner, lunch, etc. to ever exist! They are so simple to make and are always a crown please. I love the kick of the spice with the tangy, creamy blue cheese and the coolness from the cream cheese.
Buffalo chicken will forever be one of my favorite flavor combos. I will never forget the first time I tried buffalo chicken dip. Probably one of the most memorable days of my life. I am sure many of us can relate to that feeling, right?
Now add in a delicious, crispy corn tortilla and we have a winner folks! I love that there are so many different ways to interpret buffalo chicken and create completely different dishes with similar flavor profiles. The magic of cooking, am I right?
Ingredients:
- shredded chicken breasts
- butter
- Frank's Red Hot sauce
- cream cheese
- corn tortilla
- monterrey jack cheese
- olive oil
- blue cheese or ranch dressing

The Steps
Preheat the oven to 350 degrees. Boil the chicken on the stove for about 30 minutes or until cooked all the way through. Shred the chicken. On the stove, melt butter. Add in the Frank's Red Hot sauce and mix. Allow the buffalo sauce to heat up. Pour the buffalo sauce over the shredded chicken. Add in the cream cheese. Mix until completely combined.
Heat up the tortilla either in the microwave or on the stove in order to make it more pliable. Add about ยผ cup of the chicken mixture to the tortilla. Add in about 1 tablespoon of cheese and roll the tortilla up. Place the tortilla crease down on the baking sheet. Repeat until all of the tortillas are filled. Brush olive oil over the tortillas. Bake for about 35-40 minutes or until tortillas start to crisp. Serve with blue cheese dressing or ranch.
Is the buffalo chicken mixture runny?
No, it should not be runny. The buffalo should not be runny once mixed in with the shredded chicken and cream cheese.
Which is better to serve with, blue cheese? Or ranch?
I am personally a blue cheese dressing type of girl. I think blue cheese compliments buffalo sauce the best. If you don't like blue cheese though ranch is an amazing choice always!
