Homemade Cinnamon Banana Bread. Soft, fluffy, moist banana bread with a strong hint of cinnamon with a slightly crispy crust on the outside. This loaf is baked to perfection. Banana bread can often be intimidating to make, especially if it is something you have never done before. I can promise if you follow this recipe, it will be full proof every single time.
It sure has been a long road, but we got here. I can't even tell you all how many times I have altered my banana bread recipes to get to this moment. I can definitely say this has probably been the hardest recipe to create to date. Banana bread is just tricky. But I can finally say I have got it down and I am super happy with the final product.
Banana bread has always been a favorite of mine. I love how soft and fresh it is. I always warm it up and add a little bit of butter to it. It makes it absolutely divine and it becomes the ultimate comfort food.
Ingredients:
- over ripe bananas
- eggs
- softened butter
- sugar
- flour
- baking powder
- salt
- cinnamon

The Steps:
Preheat the oven to 350 degrees and spray a bread pan with cooking spray. Add 3 over ripe bananas to the mixer. Mix until they are mashed. Add in softened butter and eggs and mix until well combined. Add in sugar and turn the mixer on until a creamy texture begins to form.
In a mixing bowl, add flour, baking powder, salt and cinnamon. Mix until combined. While mixing on low, slowly add in the flour. Once all of the flour is added, mix on medium for about a minute or two to make sure it is mixed together well. Pour the mixture into the bread pan. Bake 55-60 minutes. Serve warm with butter if desired.
Can gluten free flour be substituted?
I would not suggest it. Since this recipe is not made with gluten free ingredients, the increments were not made for gluten free flour. This can drastically change the results of the recipe. You can try a 1 to 1 substitute gluten free flour but it will change the recipe and you may not get the same texture or rise on the bread.
