Ingredients

For the Chicken Bites

  • 2 chicken breasts
  • ¾ cup pork panko
  • 2 eggs

For the Ranch

  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 ½ tablespoon lemon juice
  • 2 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoon onion powder
  • 2 tablespoon fresh dill chopped
  • 1 tablespoon parsley chopped

Instructions

For the Chicken

  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  • Cut the chicken breast into small cubes.  Drop each piece in the egg wash and coat.  Transfer from the egg wash to the pork panko and coat the chicken.  Place on a baking sheet.  Bake for 16-18 minutes or until chicken is cooked all the way through.  Serve immediately with ranch.

For the Ranch

  • For the ranch, combine sour cream, mayonnaise, chopped dill, chopped parsley, garlic powder, onion powder, salt and pepper in a bowl.
