Cheesy Butter Bacon Mashed Potatoes

Creamy, cheesy, buttery mashed potatoes with crispy bacon mixed in.  This is the ultimate Thanksgiving side dish and also pairs very well with a Christmas dinner spread.

Equipment

  • Boiling Pot
  • Potato Peeler
  • potato masher or ricer

Ingredients

  • 4 russet potatoes peeled and cubed
  • 6 slices bacon
  • ¾ cup milk
  • 3 tablespoon butter
  • 1 ½ cup sharp white cheddar shredded
  • 2 garlic cloves minced
  • salt and pepper to taste
  • diced chives to garnish

Instructions

  • Skin the potatoes using a potato peeler.  Cut the potatoes into cubes.  Place in a boiling pot and fill the pot with water until potatoes are covered.  Boil the potatoes until they are soft and you can easily stick a fork into them.  This will take about 15-20 minutes once boiling.
  • Fry the bacon until crispy and chop into pieces.  Remove the potatoes from the water to a mixing bowl and mash using a potato masher.
  • Add in the milk, butter, shredded white cheddar, garlic cloves and salt and pepper.  Mix until combined.  Add in the bacon and mix. Garnish with chives  Serve immediately with sour cream if desired.
