Cheesy Butter Bacon Mashed Potatoes. Creamy, cheesy, buttery mashed potatoes with crispy bacon mixed in. This is the ultimate Thanksgiving side dish and also pairs very well with a Christmas dinner spread. All of the extra cheesiness is so welcome and then the saltiness from the bacon creates the perfect combination with the creaminess of the potatoes. This is also a great side for a weeknight dinner and is completely kid friendly.
When it comes to mashed potatoes, I am picky. And I think that is because growing up, we only ever did potatoes mashed with butter and that was it. Now that I know better, you bet I am adding in the cheese, bacon and milk to get some extra creaminess on top of the butter! I mean come on, if you're going to make mashed potatoes, especially for a holiday, make them right!
Ingredients:
- russet potatoes
- bacon
- milk
- butter
- white cheddar cheese
- garlic cloves
- chives
- salt and pepper
Kitchen Appliances:
- boiling pot
- potato masher or ricer
- potato peeler
The Steps:
Skin the potatoes using a potato peeler. Cut the potatoes into cubes. Place in a boiling pot and fill the pot with water until potatoes are covered. Boil the potatoes until they are soft and you can easily stick a fork into them. This will take about 15-20 minutes once boiling. Fry the bacon until crispy and chop into pieces. Remove the potatoes from the water to a mixing bowl and mash using a potato masher. Add in the milk, butter, shredded white cheddar, garlic cloves and salt and pepper. Mix until combined. Add in the bacon and mix. Garnish with chives Serve immediately with sour cream if desired.

Can the bacon be omitted?
Absolutely! If you need a vegetarian friendly recipe you can easily just not add the bacon! The bacon is added at the end so this is a super easy step to skip!
