Sweet Pineapple Stuffing. Sweet, soft stuffing with chunks of pineapples throughout, and some crispy cubes of bread sneak in there on the top. A sweet stuffing is exactly what you never knew you needed and once you have it, you will never be able to live without. It is the perfect side for holiday dinners. I always believe it is necessary to add a little sweet to the savory. I love making this as a side to a slow cooked pineapple brown sugar ham, it is the perfect combination.

I remember my first time having pineapple stuffing. A family member brought it as a side to Thanksgiving back when I was in high school before my cooking days began. I was so intrigued, I mean who does sweet stuffing? It sounded to weird to me but I had to try it. Thank goodness I did because I was instantly hooked. Every holiday from that point on I begged my aunt's Mom to make it because yes, it is that good.
Eventually, once I started my own cooking tenure, I knew this was one I needed to develop. I knew the basic flavors that went into it but I had never made it before so the main goal was to figure out how I wanted mine to be. After a little playing around, I got the perfect flavor and texture I was looking for. And I don't mean to brag or set super high expectations, but its pretty perfect!
