Hand Cut Homemade French Fries

Crispy double fried thin hand cut potatoes doused in a generous sprinkling of salt, pepper and garlic powder for some extra flavor.

Ingredients

  • 6 russet potatoes
  • canola oil or peanut oil amount depends on deep fryer
  • 1 tablespoon salt
  • ½ tablespoon pepper
  • ½ tablespoon garlic powder

Instructions

  • Peel the potatoes with the potato peeler.  Cut the potatoes into thin, but long pieces.  Place all of the potato pieces into a large bowl and cover in water.  Let the fries soak for about an hour.  Remove fries from the water and dry completely. 
  • Fill deep fryer with oil and heat to 325 degrees.  Place the fries in the fryer and fry for about 5 minutes.  Remove from the fryer.  After all of the fries have fried, turn the heat up to 375 degrees.  Add the fries to the oil one more time and fry for 5-7 minutes until the ends begin to brown.
  • Remove to a bowl and sprinkle salt, pepper and garlic.  Serve immediately.
