Ingredients

  • 2 spinach and herb burrito tortillas wraps
  • 6 eggs scrambled
  • 4 breakfast sausage links
  • ¼ cup monterey jack cheese shredded
  • ½ cup guacamole
  • ¼ cup sour cream
  • salt and pepper to taste

Instructions

  • Prep the guacamole. Click the guacamole ingredient hyperlink above for the recipe.
  • Cook the sausage links.
  • Cook the scrambled eggs. This should take about 5-6 minutes depending on how done you like them.
  • Once the eggs are almost cooked, add the cheese and let that melt.
  • Add the eggs to the tortilla.
  • Add the sausage links, guacamole, sour cream and salt and pepper.
  • Fold on side of the burrito over the fillings and slightly tuck under.
  • Fold the two ends over the first fold.
  • Roll the burrito until closed.

Notes

Always cook the eggs fresh.
You can save and reheat but you will notice a difference in quality.
Serve extra guacamole as a dip with tortilla chips.
