Out with the typical sausage, egg and cheese, in with the sausage, egg and cheese with guacamole wrapped in a burrito! Take your breakfast sandwich game to the next level!
I can't lie, before I started dating Nate, I was pretty simple when it came to my breakfasts. Growing up, Saturday morning breakfast was always a big deal in my parent's household. My Dad always took it to the next level! My order seemed to always stay the same though. Two dippy eggs with white toast and whatever breakfast meat was on the side. I never branched out. I would of course partake in waffle or pancake mornings, but if we were doing eggs, that was my order every time.
Once Nate and I started dating, he was quick to help me branch out. And oh my goodness am I happy I did! Who knew there were so many awesome ways to eat eggs?! Don't worry, I do still have my occasional dippy egg, but now I have so many ways to cook eggs in my toolbox that I don't find myself cooking dippy eggs that often anymore! It is crazy once you branch out and start trying something new how you realize just how much you were missing out on!
Ingredients:
- spinach and herb burrito tortilla
- egg
- shredded monterey jack cheese
- breakfast sausage
- The Buttered Gnocchi Guacamole
- sour cream
- salt and pepper

The Steps:
I usually start by making the guacamole. That way it is already made and set aside so that when the eggs are done you are ready to build your burrito and everything is fresh! I also start cooking the sausage at that point because it takes a little longer to cook than the eggs do. The next step is to cook the eggs. I cook them scrambled style. Once the eggs are almost cooked, add the cheese on top so that can begin to melt.
Once the eggs are done, dump them onto the tortilla. Season with salt and pepper. Add the sausage, guacamole and sour cream. You can add other fixings if you prefer as well. The guacamole has diced tomato and onion in it, so you get a crunchy vegetable flavor from those. When you are ready to roll your burrito, fold one end over the filling and tuck under. Fold both ends over the fold and then roll the burrito.
Why are there no tomatoes or other vegetables added?
In the guacamole recipe, there is diced tomato, onion and minced garlic. It adds a lot of extra flavor to the burrito and you definitely get the crunch from the veggies which satisfies that texture. You can always add some extra veggies if you prefer, but I don't think its needed!
Can I substitute sausage for other breakfast meats?
Of course! Bacon is always a delicious addition to any recipe. You could always chop up some pork roll or Canadian bacon too! Turkey bacon is also a great option if you want something a little more lean!

Sausage, Egg, Cheese and Guacamole Breakfast Burritos
Equipment
- Frying Pan
Ingredients
- 2 spinach and herb burrito tortillas wraps
- 6 eggs scrambled
- 4 breakfast sausage links
- ¼ cup monterey jack cheese shredded
- ½ cup guacamole
- ¼ cup sour cream
- salt and pepper to taste
Instructions
- Prep the guacamole. Click the guacamole ingredient hyperlink above for the recipe.
- Cook the sausage links.
- Cook the scrambled eggs. This should take about 5-6 minutes depending on how done you like them.
- Once the eggs are almost cooked, add the cheese and let that melt.
- Add the eggs to the tortilla.
- Add the sausage links, guacamole, sour cream and salt and pepper.
- Fold on side of the burrito over the fillings and slightly tuck under.
- Fold the two ends over the first fold.
- Roll the burrito until closed.
