Slow Cooker Beef Stew

This hearty, savory stew is the perfect comfort meal. Cooking it low and slow allows all of the flavors to develop and create a perfect flavor profile.

Ingredients

  • 8 cups beef stock
  • 1 lb beef cubes
  • 2 potatoes chopped
  • 2 carrot sticks chopped
  • 1 12 oz can of tomato paste
  • 1 can of creamed corn
  • 1 onion chopped
  • 1 teaspoon garlic powder
  • 1 package of mini gnocchi

Instructions

  • Either the morning of or the night before, chop up the potatoes, carrot sticks, and onion.
  • Add the chopped potatoes, carrots, onion, beef cubes, tomato paste, creamed corn, garlic powder and beef stock into the slow cooker.
  • Put the slow cooker on low and let is cook for 7-8 hours.
  • You want to stir the stew occasionally making sure the tomato paste is mixed in.
  • When there is about 30 minutes left, boil the gnocchi.
  • Add the gnocchi to the stew and cover for 20 more minutes.
  • Serve and enjoy!

Notes

Store in the fridge for up to a week.
