Vegan Pesto Fettuccine with Toasted Pine Nuts. Herby, pesto sauce with fettuccine noodles tossed in topped with nutty toasted pine nuts. This meal is a super easy dinner and the pesto sauce is delicious, herby and irresistible. This easy weeknight dinner is perfect for the whole family to enjoy.
Pesto pasta was my thing in college. I had in once in the dining hall and was immediately obsessed. It got so bad that I didn't even need to order when I went up to the pasta station, the pasta guy just knew what I wanted.
I have been trying for years to replicate that flavor. And I must say, I have gotten pretty dang close with my pesto recipe. This will forever be one of my favorite weeknight dinners. It is so easy to throw together and is absolutely delicious.
Ingredients:
- fettuccine pasta
- basil
- pine nuts
- nutritional yeast
- garlic cloves
- salt
- pepper
- lemon juice
- olive oil

The Steps:
In a blender, add basil, 1 cup of the pine nuts, 1 cup of the olive oil, nutritional yeast, garlic cloves, salt, pepper, and lemon juice. In a boiling pot, prepare fettuccine noodles to your liking. Add the rest of the pine nuts and olive oil to a frying pan and cook until lightly toasted. Add the pesto and noodles to a skillet and toss. Serve with toasted pine nuts sprinkled on top.
Doesn't pesto usually have cheese in it?
A typical pesto recipe does, yes! I personally like the flavor from the nutritional yeast better than the flavor I get from parmesan cheese in this instance! It can be swapped for parmesan cheese if you choose though!

- 1 ½ cup pine nuts
- 1 cup olive oil plus a little extra to toast pine nuts
- 4 tablespoon nutritional yeast
- ½ teaspoon salt
