Tzatziki Sauce Greek Stuffed Peppers with Rice and Feta is a delicious, healthy weeknight dinner recipe. Stuffed peppers with turkey, rice, veggies and feta topped with a creamy tzatziki sauce.
This recipe is a perfect quick and easy weeknight dinner recipe. I love making this recipe when I know we have a lot on our plates because it is super easy to make but is always totally satisfying.

Ingredients
This recipe only requires a few ingredients and they all get stuffed into the bell peppers.
For the peppers:
- bell peppers
- ground turkey
- olive oil
- garlic cloves
- brown rice
- chicken broth
- lemon juice
- feta cheese
- fresh dill
- salt and pepper
For the Tzatziki sauce:
- non fat greek yogurt
- cucumber
- fresh dill
- lemon juice
- salt and pepper

Instructions
Add olive oil and garlic to the frying pan. Cook until fragrant. Add the ground turkey and cook until browned. Cook the rice using chicken broth instead of water using either the directions on the package or a rice cooker. Once the rice is done, add the lemon juice and mix.
Remove the ground turkey from the stove and add to the mixing bowl. Add in rice, feta cheese and fresh dill. Mix until combined. Cut the bell peppers in half and take out the seeds. Stuff the peppers with the ground turkey mix and sprinkle feta cheese one top. Bake at 350 degrees for 15 minutes.
While the peppers are baking, prep the tzatziki sauce. Chop up the dill and dice the cucumber. Mix greek yogurt, dill, cucumber, lemon juice and salt and pepper to the bowl. Mix until well combined.
Once the peppers are done, remove them from the oven and top with Tzatziki sauce.
Hint: bake the peppers in a cast iron skillet or a small casserole dish.
Substitutions
This recipe is already gluten free but you do have a few options of some additional substitutes depending on diet!
- Turkey - this can be replaced with any ground meat. I would suggest chicken if anything though because you don't want to take away from the Greek flavors in this dish.
- Vegetarian - omit the ground turkey or use plant based ground meat.
Variations
There are also some ways you can spice up this recipe!
- Spicy - add chili pepper flakes while cooking to imbue heat into the dish, or a splash of hot sauce.
FAQ's
Yes! This recipe is 100% entirely gluten free!
Ground chicken is another great option! You can use ground beef but I would advise against it since the flavor doesn't pair as well with the feta and tzatziki sauce.
Equipment
To make this recipe, all you need is a mixing bowl and a cast iron skillet.
Storage
Save the extras in a Tupperware for up to 3 days refrigerated. I also suggest saving the filling to the stuffed peppers separate and baking the peppers fresh whenever you are enjoying the leftovers!
Top tip
Don't overcook the ground turkey! You don't want it to dry out.

Ingredients
For the peppers
- 1 clove garlic

How much garlic? Also, is there some feta that goes in the peppers and then some more for topping?

I use 1-2 cloves! I just updated the recipe to make sure that is in there! The amount listed for feta is the amount to mix into the pepper but I like to add some on top as well.
