Kielbasa Peppers and Onions simmered in a savory tomato sauce and complimented with herbs and spices all mixed together to create the perfect 15 minute weeknight meal! This recipe is so fresh and packed with a ton of delicious Italian inspired flavors. It is the perfect meal for a weeknight when you don't want to cook a huge meal but you want something fresh and flavorful with real ingredients.
I love quick weeknight meals. I also love cooking meals that are so in depth that it takes me hours upon hours. Cooking is my therapy and helps me center my entire day whether good or bad and just focus on what I am doing. Sometimes though, even if I want to cook a longer, more complex meal, I am just way too tired or find myself having to get a million other things done! Welcome to adulthood!
Thank goodness meals like this exist, seriously. Sometimes they are just a lifesaver! The first time I made this recipe, we had just come home from vacation and our kitchen needed a major food restock. I decided to try and make due with what I had, found a few peppers hanging on for dear life in the fridge, an onion begging to be cooked, a package of kielbasa in the freezer, and a jar of tomato sauce. I knew I could do something with it! Eventually I came up with this delicious, light meal and now we are obsessed!
Ingredients:
- kielbasa
- olive oil
- peppers
- onion
- garlic cloves
- tomato sauce
- Italian seasoning
- salt and pepper

The Steps:
The start, slice the onion and mince the garlic. Heat up the olive oil in the skillet and add the onion and garlic. Cook until the garlic becomes fragrant and then add in the tomato sauce.
Slice the peppers and cut the kielbasa into half inch pieces. Add peppers and kielbasa to the tomato sauce and bring to a simmer and simmer for about 10 minutes. Add in Italian seasoning, salt and pepper. Stir in the spices and allow it to simmer another 5 minutes. Serve and enjoy!
Does it matter what color bell pepper I use?
Nope! They all are so similar in flavor so you really can choose whatever color scheme you want! If you want it to be super colorful, use yellow, red, AND green!
Can I sub Italian sausage for Kielbasa?
Absolutely! You will get a slightly different flavor, but it is still going to be absolutely delicious! Both meats are extremely complimentary to this dish!

Kielbasa Peppers and Onions

Ingredients
- 1 package kielbasa
- 2 bell peppers
- 1 onion
- 2 garlic cloves minced
- 1 jar tomato sauce
- ยฝ teaspoon Italian seasoning
- salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Slice onion and mince garlic.
- Heat olive oil in a skillet on medium heat. Add in the onions and garlic. Cook until garlic is fragrant.
- Add in tomato sauce.
- Slice peppers and kielbasa. Add both into skillet and bring sauce to a simmer. Allow it to simmer for 10 minutes.
- Add in Italian seasoning and salt and pepper. Mix in and allow the sauce to simmer another 5 minutes. Serve and enjoy!
