These low carb crispy pickle chips are a new and delicious twist on cheese pickles. Only taking up 15 minutes of your time from start to finish and just requiring two main ingredients, pickles and cheese, this recipe is not only great if you need a quick snack without taking up a lot of time and is also budget friendly. This cheesy pickle chip recipe gives you all the flavor and textures you love from fried pickles but without the frying and oil.

Ingredients
- dill pickle chips
- colby jack cheese
- mozzarella cheese
- parmesan cheese
- paprika
- garlic powder
- salt
- black pepper

Instructions
- Step 1: Preheat the oven to 400 degrees. Shred the cheeses.
- Step 2: Spread the shredded cheese in a single layer on a baking sheet covered with parchment paper.
- Step 3: Place each dill pickle slice on top of the cheese evenly spaced. Add seasonings on top of the pickles.
- Step 4: Bake about 15-20 minutes or until cheese is brown and crispy and golden brown. Break apart the pickle chips and serve with dipping sauce.
Hint: after removing the pickles and cheese from the oven, let them cool for about 3-5 minutes. This will allow the cheese to slightly harden and crisp up.
Substitutions
- Pickles - instead of pickles, use onions for a different flavor profile
- Cheese - use cheddar cheese if you want to change up the type of cheese being used
- Pickle Chips - use a pickle spear instead of pickle chips for a different texture. For a completely different flavor, replace the dill pickles with butter pickles
Variations
- Spicy - add chili pepper flakes or cayenne pepper on top of the pickles to add heat to the dish
- Onion Ring Chips - use onions instead of pickles for a delicious alternative

To create this recipe, you will need a baking sheet, parchment paper and a cheese grater if you are grating your own cheese.
Storage
Store leftovers in an airtight container in the fridge. Good for 3-5 days.
These ingredients don't stand up well to freezing.
Top Tip
Instead of buying pre-shredded cheese, buy blocks of cheese and shred them yourself. Cheese that is bought pre-shredded has a film on it that makes it harder for the cheese to melt evenly. When shredding the cheese yourself, the cheese will melt more evenly giving a better crisp.
FAQ
The melted cheese will be a little oily. Dab the pickle cheese chips with a paper towel to decrease the amount of leftover oil.
These pickle chips go well when served with a copycat Buffalo Wild Wings fried pickle sauce, copycat burger king zesty sauce, or something as simple as ranch dressing or ranch dip.
If you cut the pickle chips into bread slice sized squares, you can use them as a replacement for bread to make pickle cheese sandwiches.
