Onion rings have always been a fan favorite, but this new social media viral crispy onion ring chips craze has put a delicious, low carb twist on everyone's favorite appetizer. Fried onion rings have always been one of my favorite apps to order when out to dinner, but these onion ring chips have quickly become my new favorite way to enjoy my favorite onion ring flavors in a low-carb way.

These onion ring chips are perfect for a quick and simple weekday snack. They are a great kid friendly snack as well. Onion ring chips can also be a delicious game day snack option if you are looking to avoid an oily mess from frying.
This was inspired by my pickles and cheese crispy chips recipe on this site, and pairs well with this Copycat Outback Blooming Onion Sauce.

Ingredients
- yellow onion
- colby jack cheese
- mozzarella cheese
- parmesan cheese
- paprika
- garlic powder
- salt
- black pepper

Instructions
- Step 1: Preheat the oven to 400 degrees. Slice the onion into thin slices, leaving the layers of the onion together.
- Step 2: Shred the cheeses. Spread the shredded cheese in a single layer on a baking sheet covered with parchment paper.
- Step 3: Place the onion slices on top of the cheese evenly spaced. Add seasonings on top of the onions.
- Step 4: Bake about 15-20 minutes or until cheese is brown and crispy and golden brown. Break apart the onion chips and serve with dipping sauce.
Hint: use a mandoline slicer to assure your onion slices are even and thin. This is the best way to get uniform slices that are all the same thickness.
Substitutions
- Onion - instead of onions, use pickles, broccoli, asparagus or almost any other vegetable of choice
- Cheese - the types of cheese can be changed up. You want a cheese that will crisp up nicely, such as shredded parmesan or cheddar
Variations
- Spicy - add chili pepper flakes on top of the onion chips for a spicy kick
- Fried Pickle - use pickles instead of onions for a fried pickle version
Equipment
To make this recipe, you will need a sharp knife and cutting board and a baking sheet. If shredding your own cheese, a cheese grater is also needed.
Storage
Store leftover onion chips in the fridge in an airtight container. Good for 3-5 days.
These ingredients don't stand up well to freezing.
Top Tip
The thinner the layer of cheese, the better. If your cheese layer is too thick, it will not crisp up correctly.
