This picnic style brie prosciutto sandwich only requires 7 ingredients and just 5 minutes out of your day to make. A beach sandwich like this is the perfect sandwich to assemble and then pack up to take to the beach or to the pool since it is so easy to save this sandwich for later without losing any of the quality. This prosciutto brie sandwich takes fresh summer sandwiches to the next level.

This delicious sandwich is a great summer sandwich. It is easy to make and then wrap up in plastic wrap to enjoy while sitting on the beach or by the pool. This is also one of my favorite sandwiches to make for a quick weekday lunch since it is so easy to make but also elevates my lunch by packing it with flavor. This simple sandwich can also be great to enjoy as an easy weeknight dinner.
This was inspired by my Mozzarella Prosciutto Sandwich recipe on this site, and pairs well with this homemade potato chips recipe.

Ingredients
The base of these brie cheese sandwiches is crispy sourdough bread, salty prosciutto and creamy brie cheese. To add extra texture, sliced romaine lettuce and fresh heirloom tomato is added. Additional flavor is added with a drizzle of hot honey and pepper jelly that is spread on the bottom piece of bread.

Instructions
- Step 1: Slice sourdough loaf into 2 pieces vertically. Slice both pieces of bread in half horizontally. Using your hands, take out some of the center of the bread.
- Step 2: Slice the tomato and lettuce. Slice the brie cheese into ½ inch slices.
- Step 3: Spread pepper jelly on the bottom slice of bread. Add sliced lettuce on top of the pepper jelly. Place one tomato slice on top of the lettuce.
- Step 4: Layer brie and slices of prosciutto on top of the tomato. Drizzle hot honey on top. Add top slice of bread to close the sandwich. Wrap in parchment paper and cut both sandwiches in half. Serve immediately or save for later.
Hint: lightly toast the sourdough until golden brown. lightly toasting the slices of bread adds a pleasant crunch and helps prevent sogginess from the juicy tomato and honey drizzle. It also draws out the bread’s natural tang, which complements the rest of the sandwich beautifully.
Substitutions
- Lettuce - instead of romaine lettuce, you can use ice berg lettuce or spinach
- Bread - use gluten free bread instead of white bread to make this gluten free
- Brie - instead of brie cheese use mozzarella or burrata cheese
Variations
- Mozzarella Prosciutto - use mozzarella instead of brie for a mozzarella prosciutto combination
- Turkey and Cheese - replace the prosciutto with deli turkey for a turkey and cheese classic
- Fruity and Sweet - replace the pepper jelly with apricot jam or fig preserves and add apple slices for a fruity and sweet alternative
- Grilled Cheese - grill the sandwich on the stove on medium-high heat or heat up in the oven to achieve a melty, gooey brie and crispy bread

How to Store a Brie Prosciutto Sandwich
Store this sandwich wrapped in plastic wrap or in parchment paper in the fridge. Good for 2-3 days.
This sandwich can also be made in advance and wrapped up to pack in the cooler for a day by the pool or on the beach.
These ingredients do stand up well to freezing when frozen separately prior to assembling for up to 2 months.
Top Tip
Make sure when buying tomatoes for this sandwich, you choose ripe, firm tomatoes. Selecting tomatoes that are ripe but still firm prevents the sandwich from becoming too juicy or soggy. Slice them evenly for balanced bites that don’t overwhelm the other ingredients but still get your taste buds going.
