Double Bacon Smash Cheeseburger with Onions and Campfire Sauce. Thin smash burgers cooked to juicy perfection with crisp edges and melty pepper jack and cheddar cheese with grilled onions and crisp bacon sandwiched between a toasted brioche bun slathered in smokey campfire sauce. Oh my goodness my mouth is watering! This is the perfect burger for any outdoor barbecue and your Memorial Day, July 4th or Labor Day guests will LOVE it! This is hands down one of the juiciest burgers I have ever had and all of the flavors just come together perfectly in this ultimate smash burger recipe!
Fun fact, this is the first smash burger I have ever made. Now I am very experienced in the burger field but never had the equipment to make a smash burger. Lucky for Nate and I, my brother Lee and his girlfriend Jess got us a Blackstone griddle as a wedding gift and oh my goodness I am obsessed! This is definitely the first of what will probably be many smash burger recipes up on the blog.
The best thing about the griddle is that you can cook everything at once on the same surface. It makes it so much easier to keep track of everything so that nothing over cooks. I can finally say goodbye to the days of running inside to keep track of how my onions are cooking and then booking it back outside to check on the burgers!
Ingredients:
- ground beef
- brioche burger buns
- cheddar cheese
- pepper jack cheese
- bacon
- onions
- salt and pepper
- mayonnaise
- barbecue sauce
- liquid smoke
- desired oil for cooking

The Steps:
Turn the griddle up to medium heat. Slice the onions. Coat griddle with oil where you will be cooking your onions. Add sliced onions and bacon to the griddle. Cook until desired doneness. Coat griddle with oil where you will cook the burgers. Form the ground beef into loose balls leaving some air pockets. Place each ball on the griddle and press down with the burger press. You want your burger to be between a quarter of an inch to a half of an inch in thickness. Once the bottom starts to crisp around the edges, flip and apply cheese. Apply cheddar cheese on half of the burgers and pepper jack on the other half. Spread mayonnaise on both sides of the brioche bun and place on the griddle. Remove the burgers once completed.
Place one pepper jack burger on top of one cheddar cheese burger (this can be flipped as well). Remove all food from the griddle. Mix together mayonnaise, barbecue sauce and liquid smoke. Spread campfire sauce on both halves of the brioche bun. Place the double smash burger on the bottom bun and top with bacon and onions. Top with the top brioche bun and serve immediately.
Can I make these if I don't have a griddle?
Absolutely! You actually have a few options! You can buy a griddle attachment for your grill and do it right on there. You can also do it on a cast iron pan indoors as well! If you have an electric griddle that is another option you have!

- 1 teaspoon liquid smoke
