Ingredients
- large or jumbo shrimp
- bacon
- mayonnaise
- ketchup
- horseradish
See recipe card for quantities.
Instructions
- Step 1: Peel your shrimp and remove the tails. Slice bacon strips in half and wrap bacon around each shrimp.
- Step 2: Heat the grill up to medium heat. Place the bacon wrapped shrimp on the grill seam side down. Grill until there are charred grill marks present on each side, about 2-3 minutes on each side.
- Step 3: Move the shrimp up to the top rack, turn the grill down to low and close the lid. Allow the bacon wrapped shrimp to finish cooking for about 5-7 minutes or until bacon appears cooked to desired crispness.
- Step 4: Mix mayonnaise, ketchup and horseradish in a small bowl. Serve shrimp wrapped bacon immediately with horseradish dipping sauce.
Hint: if the bacon will not stay in place, use bamboo toothpicks that have been soaked in water for ten minutes to help secure it in place. Soaking the toothpicks will keep them from burning.
Substitutions
- Shrimp - instead of shrimp, use scallops
- Bacon - use turkey bacon as a leaner alternative to pork bacon
- Horseradish Dipping Sauce - serve with barbecue sauce as an alternative
Variations
- Spicy - add Nashville hot seasoning or buffalo sauce when grilling to add heat to the dish
- Shrimp Skewers - grill your shrimp wrapped in bacon on skewers that have been soaked for 10 minutes. This will also help hold the bacon in place
- Tacos - serve on tacos with shredded lettuce and barbecue sauce
- BBQ Bacon - baste with bbq sauce during the grilling process for a bbq version
Equipment
To create this recipe, a gas grill or a charcoal grill is needed. It is also helpful to use toothpicks to help the bacon stay on the shrimp while grilling. Grill tongs are also necessary to flip the shrimp wrapped in bacon.
Storage
Store the cooked shrimp wrapped in bacon in an airtight container in the refrigerator. Good for 2-3 days. Store the leftover sauce covered in the fridge.
These ingredients do stand up well to freezing prior to cooking for up to 2 months.
Top tip
If a grill is not available, cook the shrimp inside in the oven or in the air fryer. In the oven, cook about 20 minutes at 350 degrees in a preheated oven. In the air fryer cook 15 minutes at 390 degrees. Flip the shrimp halfway through to assure the shrimp and bacon evenly cooks.
FAQ
This could be done by using indirect heat. If using a gas grill, only light half of the burners and leave one side off. This will allow the shrimp to bake without continuing to sear and char the bacon. If using a charcoal grill, keep the charcoal pushed to one side of the grill to create the same effect.
This is personal preference. This recipe was created with a thinner slice of bacon so if a thicker slice is being used, make sure the cooking time is increased to assure it is cooked through.
