This recipe is so simple, anyone can make it in under 30 minutes when using a rotisserie chicken making it the perfect appetizer to make when on a time crunch. These tasty buffalo chicken sliders only require 8 simple ingredients and are the perfect go to appetizer for game day.

Sliders are a great appetizer to make for any party or occasion and these fan favorite buffalo chicken sliders are no exception. They are excellent as a quick and easy appetizer to make for football Sunday game day during football season and can also be a delicious, quick and easy weeknight dinner perfect for a busy night where you need to make something with minimal preparation.

Ingredients
These sliders are made using a juicy rotisserie chicken due to its ease to shred and high quality and flavor of the meat. Mixed in with the chicken is a combination of buffalo sauce and ranch that is then sandwiched in between sweet Hawaiian rolls with Cooper Sharp American cheese. The tops of the rolls are basted with a mixture of melted butter, garlic and a small amount of blue cheese dressing.

Instructions

- Step 1: Shred rotisserie chicken and set aside in a medium bowl. Slice slider buns and remove the tops of the rolls. Place bottom halves of the rolls in a casserole dish lined with parchment paper. Preheat oven to 350 degrees.

- Step 2: Mix in buffalo sauce and ranch with shredded rotisserie chicken. Spread a little ranch on the bottom half of the rolls. Evenly spread buffalo chicken mixture over the bottom half of rolls.

- Step 3: Place slices of sharp American cheese over the chicken mixture. Place tops of the rolls over the cheese. Melt butter. Add garlic and blue cheese to melted butter.

- Step 4: Baste top half of the rolls with the melted butter mixture. Cover sliders with aluminum foil. Bake 20-25 minutes, or until cheese is melted. Remove from oven. Serve immediately or save for later.
Hint: use a creamy blue cheese dressing that does not have chunks in it. This will help it mix into the butter evenly to help flavor the butter but won't leave chunks of blue cheese on the tops of your sliders, unless that is a texture you prefer.
Substitutions
- Ranch - use vegan ranch for a dairy free option. Lite ranch can also be used for less fat
- Bun - use gluten free buns instead of white bread Hawaiian sweet rolls to make this gluten free
- Vegetarian - the shredded chicken can be replaced with a plant based chicken for a vegetarian option
- Cheese - if you can't find Cooper Sharp brand American cheese at your local grocery store, use any brand sharp American cheese
Variations
- Chicken Bacon Ranch - use shredded chicken mixed with ranch and add bacon and cheddar for a chicken bacon ranch slider version
- BBQ Pulled Pork - sub out the chicken for pulled pork and use barbecue sauce
- Buffalo Chicken Cheesesteak - add the chicken mixture and cheese to a hoagie roll for a buffalo chicken cheesesteak

To make this buffalo chicken slider recipe, you will need a casserole baking dish or baking sheet to bake the sliders on. A medium bowl is needed to mix the chicken with buffalo sauce and ranch.
