Ingredients
For this burger, use 80/20 ground beef. That means the ground beef is a mixture of 80% meat and 20% fat. A good quality brioche hamburger bun is also suggested. American cheese is a great option for the cheese as it is mild and melts evenly. Lettuce is added to the burger as well for added texture. The bang bang sauce is homemade and consists of sweet chili sauce, mayonnaise, sriracha and rice vinegar.

Instructions
- Step 1: Form the burgers into burger patties that are about 1 inch thick using your hands. Add a dimple to the middle of each burger with your thumb.
- Step 2: Cook the burgers on medium-high heat. Cook about 3-5 minutes on the first side. Flip the burger. Add a slice of cheese. Cook until desired internal temperature is reached.
- Step 3: On medium heat toast the brioche bun in a little olive oil. Slice lettuce. Dice the onion.
- Step 4: On the bottom bun, add a little bang bang sauce. Layer the lettuce on top of the sauce. Add the burger patty. Top with more bang bang sauce and diced onion. Place top bun to close the burger. Serve immediately.
Hint: make a homemade bang bang sauce. The flavor is so spot on to the Bonefish Grill version of this delicious sauce and will yield the best flavor. If your bang bang sauce feels overwhelming and spicy, stir in extra mayonnaise to soften the heat, or add a touch of honey to balance the spice.
Substitutions
- Lettuce - instead of romaine lettuce, you can use ice berg lettuce or spinach
- Bun - use gluten free buns instead of white bread buns to make this gluten free
- Vegetarian - the beef hamburger can be replaced with a plant-based burger to make this vegetarian
Variations
- Spicy - add chili pepper flakes, extra sriracha or hot sauce to the bang bang sauce
- Deluxe - add onion rings on top instead of diced onions for a deluxe version
- French Onion - use a dijonnaise sauce, onion soup packet seasoning in the burger meat and caramelized onions for a french onion soup burger version

Equipment
To make this recipe, you will need a frying pan, skillet or a gas grill. A sharp knife and cutting board are also needed as well as a spatula.
How to Store Bang Bang Burgers
Store the wet ingredients (lettuce, onion) separately from the burgers in airtight containers in the fridge. Good for 2-3 days. The buns should be stored in an airtight container in a bread drawer or in a bread box for up to 5 days or until stale.
These ingredients do stand up well to freezing for up to 2 months.
Top Tip
Add a dimple to the burger patty. This will help keep your burger patty from shrinking. Adding a dimple to the center of the patty the meat is then able to expand evenly which counteracts the burger's natural tendency to shrink around the edges.
FAQ
Ground chuck is preferred for its higher fat content, which makes the burger juicier and more flavorful. You can use leaner beef, but the burger may be less moist.
Absolutely. Grilling adds a smoky flavor and a nice char, which pairs excellently with the bang bang sauce.
The sauce usually has a moderate heat level from sriracha, but it can be adjusted to your preference by using less or more sriracha sauce.
