Peppermint White Chocolate Cookie Christmas Bark. This takes all of my favorite holiday flavors and combines it into one sweet, crispy, easy to make holiday dessert. Tis the season my friends, and if you are anything like Nate and myself, you are 100% deep into the holiday spirit, That's right, this means cookies, Christmas decor, Christmas movies every night, warm cozy hot chocolate, and our favorite Christmas desserts. Talk about a vibe!
Christmas has always been my favorite holiday. I love the build up, the family time, the traditions, and my favorite part of all, its basically a two day holiday! That means double the holiday spirit in my opinion! One of my favorite traditions includes indulging in all of my favorite holiday desserts.
This dessert is a new one in our home but I think it is here to stay from year to year. I don't think I have a choice honestly because Nate is obsessed with them! Day one he ate about half the bag, no joke. I can't say I blame him though!
Ingredients:
- white chocolate chips
- unsalted butter
- milk
- peppermint candy canes
- peppermint sandwich cookies

The Steps:
In a double boiler or sauce pan, melt the butter. Add in the white chocolate chips and begin to stir. You want to make sure you are constantly stirring so the chocolate doesn't burn or get dried out. Add milk if necessary to help it melt through more. Once the chocolate is melted, spread the melted chocolate evenly on a baking sheet.
Place the candy canes in a Zip-loc bag. Smash with whatever you have on hand. Add the peppermint cookies to another bag, smash until it is crumby. Sprinkle both evenly on top of the chocolate. Place the chocolate in the freezer for one hour to set. Once done place a spatula under the chocolate layer and lift up. Chocolate will begin to break into bark. Continue until all chocolate is removed. Break more with hands if necessary.
Do I have to use white chocolate?
You can absolutely switch it out for milk or dark chocolate if you would like to! It will obviously change the flavor but the same steps would be used!
What if I can't find peppermint sandwich cookies?
You can either use regular chocolate sandwich cookies or you could also omit them all together. I just love the extra cookie crisp it adds!
